Welcome to #1 of a 20 part series on Super Simple Suppers! Every Thursday for the next 20 weeks I will be posting a simple, vegan, meal idea with several variations.
The first meal is Spanish Rice. I love Spanish rice and make it a lot. Really, there are so many different ways to make it that there is lots of meal ideas in this idea alone.
- Water (about twice as much rice)
- Tomatoes (never seen it without tomatoes)
- Whatever else you want to add (veggies, protein, spices)
This what I did earlier this week:
- 1 small onion
- 1 1/2 tsp chopped garlic
- 4 cups water
- 1 1/2 cups multicolored rice mix from whole food bulk bin
- 1 1/2 tsp salt
- 1/4 cup green olives
- 1 cup corn
- 1/4 tsp curry powder
- 3/4 tsp chili powder
- 2 tsp lemon juice
Fry chopped onion and garlic till tender. Add the rest of the ingredients. Bring to boil and then turn down to simmer for about 30 minutes or until rice is tender. Different rice might need more water or more time to cook off (but either is easy to do)
I have tried several different kinds of vegetables or different spices, each time the result is different, and each time it is yummy.
