This week we are doing burritos!
I love refried beans, but very often if you purchase them from a store or restaurant, they include lard. They are really simple to make yourself.
- about 2 cups cooked pinto beans-soaked and boiled or canned
- 2-3 tbsp of olive oil
- salt to taste
- I like a bit of garlic and cayenne too 🙂
Put everything in a skillet and mash with potato masher while it heats up. Cook till desired consistency. Time depends on how much water was with the beans. You can always add more water if they get too dry.
Eat with tortilla, veggies and salsa. I love mine with spinach and avocado (and lots of salsa).
Note: You can use other beans or a combination of beans for different variations.
