Super Simple Suppers – Dahl Soup

Ready for another simple vegan recipe? Ready to travel again?  Last week was a Thai curry that was amazing.  This week we are headed to India for an amazing vegan (full meal) soup.  Really, this is a version of lentil soup, but Dahl is a much more exciting name.

My kids actually eat this as well.  I would love to have a blog of how to get kids to eat healthy vegan foods… but this isn’t that kind of blog.  I cook healthy and struggle like most people with getting kids to appreciate it.  However, my kids have asked for this recipe to be made again and again!

Ingredients:

  • 1 tbsp of oil (I use olive)
  • 1 onion chopped
  • 1 tsp garlic
  •  1 tsp curry
  • pinch of cinnamon
  • pinch of nutmeg
  • 4 cups water
  • 1 cup red lentils
  • 14 oz canned crushed tomatoes (give or take a few oz depending on the size of can you get)
  • Salt and pepper to taste
  • Can of coconut cream

Heat oil in pan.  Add onion and cook until tender.  Add garlic and spices and cook until garlic is browned a bit.  Add water, lentils, and tomatoes and bring to a boil.  Reduce heat and cook about 20 minutes or until lentils are tender.  Cool mixture to where it can go in the blender.  (boiling liquid put into the blender is a bad idea).  Blend until smooth.  Warm up again on the stove (if needed) and add the can of coconut cream.  Serve warm with salt and pepper.  Maybe some fresh bread too :)
