Substitutions

There are several substitutions I use when cooking off recipes that I wanted to share.

  1. Egg-1/4 cup applesauce in baked goods or 1 tbsp ground flax-seed in anything that needs to bind
  2. White Flour – 3/4 or a bit more whole wheat flour. Sometimes it needs to sit a bit in the batter and soak up some of the moisture. 1 to 1 wheat flour to white often comes out to dry.
  3. Butter or Margarine-equal halves of oil and water (olive or canola) mixed together.  So for 1/2 cup margarine put 1/4 cup water and 1/4 cup oil into the measuring cup and mix with a fork before adding.
  4. Milk-Soymilk, water or a combination of the two
