I don’t have a picture of this but I make it up a bunch and made it up just before we left on vacation. It is a great way to use up leftovers. Really, rice and tomato sauce is needed but then just about any veggie or protein can be added that needs to be used up. I like putting in salsa as an easy way of spicing it up. What I did before vacation was rice, leftover crushed tomatoes, sweet corn, broccoli, and salsa. Some of our favorite stuff to put in is salsa (or hot pepper), and olives (black or green). Rice is such an awesome food and this changes up the taste from the more Asian flavored meals to add variety.
