Making Them Smile Pancakes

Ok, kinda silly name, but ‘healthy, vegan, whole wheat, pancakes’ just doesn’t have the same ring.

Lily wanted to share our pancake recipe with you in time for Christmas.  Hope you enjoy!

Ingredients:

  • 1/2 cup applesauce
  • 2 cups whole wheat flour (if not already added, add a few tbsps of gluten flour in these 2 cups to help them stick together)
  • 2 cups milk (or a water and milk combo)
  • 1 tbsp sweetener (sugar, honey or whatever you got)
  • 3 tbsp oil (I use canola)
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • optional 1/2 cup chocolate chips

Mix together.  Let sit for a few minutes for the flour to soak up the liquid.  Fry on each side till brown and dry in the middle.  A griddle works great if you have one.  I do it on the stove at medium low heat.

Lily likes making pancakes in the morning and they are a good, filling way to start the week.

 

The most important part.

 

 We eat ours with peanut butter, apple sauce and elderberry syrup.  Yum!

Next weeks posts will be of our Christmas week.  Starting in January I am going to do a 20+ week series (every Thursday) on whole, healthy, simple, vegan and cheap meals.  I have been big on desserts lately cause I love them, but I want to feature some of the everyday challenges.

I feature vegan cooking but you don’t have to be vegan to enjoy it.  Feel free to add it to your weekly menu as one day of cheaper and less meat cooking.

    Perfect timing, Lily! Thanks for sharing the recipe. We are running low on eggs and we are leaving town right after Christmas to visit family so I am trying to use up what we have in house. I haven’t made our usual breakfasts as a result. The batter is sitting right now and we’ll cook up a batch shortly!
