Super Simple Suppers — Burritos

Welcome back to Super Simple Suppers.  Every week we have a new minimalist, simple, vegan recipe.  This winter and spring we are focusing on meals.  For more vegan recipe ideas check out the recipe page.

This week we are doing burritos!

I love refried beans, but very often if you purchase them from a store or restaurant, they include lard. They are really simple to make yourself.

Refried Beans:

  • about 2 cups cooked pinto beans-soaked and boiled or canned
  • 2-3 tbsp of olive oil
  • salt to taste
  • I like a bit of garlic and cayenne too 🙂

Put everything in a skillet and mash with potato masher while it heats up.  Cook till desired consistency.  Time depends on how much water was with the beans.  You can always add more water if they get too dry.

Eat with tortilla, veggies and salsa.  I love mine with spinach and avocado (and lots of salsa).

Note: You can use other beans or a combination of beans for different variations.

  1. We love refried beans here as well! I usually saute peppers and onions with mine, and also add chili powder. So yummy! And definitely an easy dinner 🙂 I too like mine with a lot of salsa.

    • Yes, peppers and onions are good too 🙂 This is a perfect meal. So many variations, easy to make balanced, lots of veggies.

  2. mmmm, we’ve been eating ours with black beans (chipotle style) lately. so yum! 🙂

    • that is my favorite restaurant!

    • That looks really good. Thanks! I put it up in the post 🙂

  3. Thanks again for sharing a really healthy meal that is low in calories.

    • Thanks for letting me add it to your link-up 🙂

  4. I’ve never made my own refried beans before. I always forget to soak the beans before hand.
We love our burritos with lettuce, tomatoes, cheese, salsa and sour cream! I usually cook up a little ground beef too, but it’s definitely not needed.

    • Yes, so many different ways to make them. They would go good with your hot chocolate. That looks fabulous 🙂
