Simply Super Suppers – Vegan ‘meat’balls

My husband doesn’t like spaghetti but will sometimes let it pass if I make meatballs like this.  Often, like this week, we are just eating the meatballs by themselves because they are good. Lots of vegetarian meatballs have lots of eggs and cheese in them. While that tastes good 🙂  here is a vegan option that also works.  I use this recipe when I have bread crumbs to use up.  Whenever bread starts getting a bit old in the fridge I grind it in the blender and store it in the freezer to use in recipes like this.

Meatball Ingredients

  • 5-6 seitan patties ground (about 3 cups ground)
  • 2 1/2 cups bread crumbs
  • 8 tbsps of flax seed ground (works best freshly ground, I use a coffee grinder)
  • 1 cup water
  • 1/3 cup olive oil
  • 2 tsp garlic powder
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • optional onion chopped up small or powdered onion of 2-3 tsps

Sauce Ingredients

  • 1/2 cup oil
  • 29 oz can (the bigger size can) of tomato paste or crushed tomatoes
  • salt/pepper to taste
  • 1/2 tsp garlic powder
  • 2 tsp oregano
  • 2 tsp basil

Mix all meatball ingredients in a bowl and set aside.  In an 8 x 13 (or close) baking dish layer the sauce ingredients in the order they are listed.  Take meatball mixture and use hands to make small balls.  Place in dish on top of sauce.  Bake at 375 for 30 minutes covered and 15 minutes uncovered.  (or until they have browned nice on the top).  Serve with spaghetti or alone.   Enjoy.


  1. You have been mentioning seitan in a lot of your recipes lately, and I can’t find it at the grocery store! I would love to try it sometime, but am thinking I will have to go to the natural foods store. We definitely like pasta here though 🙂
